BRIEF BIO
Dr. S. Sabu is an Associate Professor in Fish Post-Harvest Technology at the School of Industrial Fisheries, Cochin University of Science and Technology (CUSAT). He holds triple main Bachelor's degree from Kerala University, a postgraduate degree in Industrial Fisheries from CUSAT, and a Ph.D. from the ICAR-Central Institute of Fisheries Technology affiliated to CUSAT. He has three years of industry experience in seafood processing and byproduct utilization, having worked with seafood processing units in India and with chitin-chitosan manufacturing companies in both India and Indonesia. This industry exposure enriches his academic and research pursuits, particularly in the areas of seafood processing and waste valorization. His current research focuses on the extraction and application of biopolymers from seafood and insects, with a special emphasis on chitosan and its diverse applications in food preservation, agriculture, and aquaculture.
